The kanji of Ebi 海 老 can be read "Old man of the sea", in reference to his 'moustaches' and curved back, and is a symbol of longevity. By its longevity and its shell resembling a samurai armor, the Ebi was a symbol very appreciated by the Japanese warriors.
It is an essential element of the new year’s festivities and great occasions, especially the Ise-Ebi 伊 勢 海 老, lobster up to 30cm. After cooking, their red color also refers to the Japanese flag. This colour is also associated with luck and success, bringing prosperity and good fortune.
