The term Ebi can be used to refer to shrimp, lobster or lobster.
The kanji of Ebi 海 老 can be read "Old man of the sea", in reference to his 'moustaches' and curved back, and is a symbol of longevity. By its longevity and its shell resembling a samurai armor, the Ebi was a symbol very appreciated by the Japanese warriors.
