The term Ebi can represent shrimp, lobster or even lobster.
The kanji of Ebi 海老 can be read as "Old man of the sea", in reference to his 'whiskers' and his curved back, and is a symbol of longevity. Due to its longevity and its shell resembling samurai armor, the Ebi was a symbol very appreciated by Japanese warriors.
