Ebi (海老) means crayfish or lobster. This name appeared in Japan in the 10th century, around 930. It is composed of two kanji meaning "old man of the sea". It has been an auspicious symbol since the Kamakura period. With its long whiskers and curved back, the lobster symbolizes longevity and vigor. It is also a very popular delicacy essential to New Year's dishes.
